Boose attended the Culinary Institute of America and after graduating, moved to Boston and worked at the Red Clay Brick Oven. He then worked in a variety of large hotel kitchens, eventually ending up as sous chef in Skipjacks (a highly regarded high- volume seafood restaurant). Chef Boose met his wife Simone at yet another restaurant job. After starting a family, Kevin and Simone relocated to Florida. Well equipped with enthusiasm, experience and knowledge, Kevin opened The Press 3 years ago in St. Augustine. Originally launched as a sandwich/panini-focused lunch restaurant, The Press has evolved into a popular lunch and dinner destination with the addition of rustic Italian dishes and an onsite bakery. With an open kitchen and comfortable table or bar seating options, diners often see Chef Boose cooking and supervising his exceptional staff.
